This bread knife by Robert Herder has a blade made of rust-resistant steel. This steel is stainless, in contrast with the carbon steel which Robert Herder usually uses. The serrated blade is hand polished. Both hard and soft bread is cut effortlessly.

The ergonomics are excellent. The handle with rounded shapes is slim and graceful and very comfortable to hold. The bread knife is designed for cooking enthusiasts who want to use their kitchen knives intensively.

Rather than the push-through chop straight edged blades excel at, the notched teeth of a serrated knife allows you to slice with a gentle sawing motion. Serrated blades are best for trickier textures, like anything hard on the outside but soft on the inside — crusty breads, bagels, and tough skinned but juicy tomatoes. A serrated knife works well for delicate cherry pies, the complex layers of a toasted turkey sandwich, or the rigid texture of a cured meat.

The blade manufactured from high-quality stainless chrome molybdenum vanadium steel is "blaugepliesstet" by hand. The "Blaupliessten" by hand is in the traditional Solingen sharpening handicraft the finest treatment of the blade surface. Today this technology is controlled by only a handful of the best sharpeners in Solingen. By this treatment, the blade gets a fine blue glow. The particularly smooth surface also splits hard things very easily. "Blaupliessten" stands for highest sharpness! This handmade knife is very sharp, just in the opposite to machine manufactured knives

The original Herder classical knife is polished and sharpened by hand. The curved extremely sharp blade is ideal for the peeling of vegetables, potatoes and fruits. This handmade knife is very sharp, just in the opposite to machine manufactured knives.

The carbon steel blade on this knife means a harder metal which can be ground to a thinner and sharper edge — and it will hold that razor sharp edge for a long time. However, the carbon content also means the blades develop oxidized stains and are prone to rust if not maintained properly. Despite this, carbon steel knives continue to have a dedicated following. It is simply a better cutting tool and maintaining them really isn’t that challenging.
 
Before there was stainless steel, if you wanted to make something sharp, you made it with carbon steel. Windmuehlenmesser has been making carbon steel knives since 1872 in the German city of Solingen, a place that has been known for blades since the Medieval era, and where sharpness of edge and quality of material is literally decreed by law.

Robert Herder fabricate since 1872 high-quality knives and other accessories for kitchen and table in her manufactory in the German city Solingen. Robert Herder are the last manufactory that produces his knives according to the “Solingen Dry-Fine-Grinding” technique. Knives ground this way are defined by their special sharpness and long-lasting cutting edge.

Windmuehlenmesser knives are taper ground, as opposed to the steep and narrow bevel of industrially produced knives. The knife’s blade is a single piece of metal that seamlessly gets sharper and thinner from heel to tip, and from spine to cutting edge. This technique creates a more stable, sharper, longer-lasting edge, and is the artisanal grind that made Solingen knives famous. Today, few craftsmen, even in Solingen, still grind blades these way, but Windmuehlenmesser’s master grinder, Wilfried Fehrekampf, has been doing it for fifty years and is passing the skill down to his team of journeymen and apprentices.

Never put a knife in the dishwasher. Exposure to harsh detergents, clanking around against other dishes, and sitting wet in the machine all contribute to degrading the knife's edge.
 
Hand wash and fully dry a carbon steel knife after use. If you've been using it to cut acidic fruits or vegetables, wash and dry it immediately to keep orange rust from forming. Never let the knife sit around in water, this will cause it to rust. Keep the blade and the handle lightly oiled with an edible mineral oil, or olive oil.
