The Folding Proofer & Slow Cooker breaks the boundaries of traditional kitchen appliances with endless versatility. Prepare delicious one-pot meals using your own favorite Dutch oven or pot. Bread bakers will love the accurate, humid, low temperature control in Proofer mode perfect for rising and fermenting yeast bread dough or sourdough. Making yogurt in your own containers, melting chocolate, slow roasting black garlic or culturing a wide variety of probiotic fermented foods such as kombucha, tempeh and kefir are just a few of the applications of this unique appliance. Best of all, it folds flat in seconds for easy storage.
In Slow Cook mode, accurate digital control maintains a range of temperatures from 85 - 195F in 5 degree increments up to just below boiling – the perfect temperature for slow cooking. Traditional slow cookers lack temperature control. In either Low or High setting they eventually heat to the boiling point, often overcooking food. The Folding Slow Cooker heats quickly and accurately to the desired temperature. Prep slow cook meals on a stove top in your favorite pot and just transfer to the Folding Slow Cooker.
Switch to Proofer Mode to create a consistent warm, humid environment for rising (proofing) and fermenting your favorite bread recipes. Optional water tray creates the perfect humidity for bread making. Get professional results baking sourdough, gluten free, whole grain or traditional bread.
Yogurt Maker: Use your own containers for up to 8 quarts of yogurt in just 3 to 4 hours using our High-Low temperature method. Create creamy Classic, Greek or even lactose free yogurt. Proofer Mode – Humid
The Brod & Taylor Folding Proofer creates an environment of consistent low-temperature warmth that is vital for many kitchen processes. Gentle and consistent radiant heat rises from the aluminum base plate. Digital temperature controls provide settings from 70-120F / 21–49C. For rising bread, humidity may be increased by using the included water tray (typical humidity is 60-80%).
A thermostat in the base of the Proofer controls the heat within a narrow range, making the Proofer much more consistent than yogurt makers, dehydrators, or ovens on proof settings. Food is warmed with radiant heat from the base and is generally stable within several degrees.
Proofer Mode – Dry
The Brod & Taylor Folding Proofer used in Dry Mode is best for making yogurt, chocolate, butter, tempeh, kifir, kombucha, sour cream, creme fraiche, cheese, and natto. Simply remove the water tray and place containers on the rack above the heating plate.
Slow Cook Mode
The Folding Proofer & Slow Cooker used in the Slow Cook Mode is best for traditional slow cooking, making black garlic, and sous vide cooking. Simply place your metal covered metal pot directly on the heating plate. For slow cooking in the Proofer both the rack and the water tray are removed. Can the original Folding Proofer be used as a Slow Cooker?
The original Folding Proofer and the Folding Proofer & Slow Cooker models use the same heating system. The key difference in the new Slow Cook model is the added ability to directly select the Slow Cook temperature. However, setting the older Folding Proofer to 120F and placing a pot directly on the heating plate will produce the same results as selecting 195F in Slow Cook mode using the new model. When using the original Folding Proofer as a slow cooker, intermediate temperatures can also be achieved, but the selection of the temperature from 70-120F (21-49C) on the digital panel do not result in the actual food temperature.
